recombinant ZIS overexpressed in Escherichia coli catalyzes the formation of the monoterpenes alpha-thujene, alpha-pinene, beta-phellandrene and gamma-terpinene from geranyl diphosphate. Transgenic tomato fruits overexpressing ZIS under the control of the fruit ripening-specific tomato polygalacturonase promoter accumulate high levels of alpha-zingiberene and other sesquiterpenes, such as alpha-bergamotene, 7-epi-sesquithujene, beta-bisabolene and beta-curcumene. The ZIS-transgenic fruits also produce monoterpenes, such as alpha-thujene, alpha-pinene, beta-phellandrene and gamma-terpinene, which are either not detected or are found only in minute concentrations in control fruits
