Isomaltulose yields above 90% in 8 h are reached in 40-65% sucrose solutions, and yields up to 82% in 24 h were obtained with 70% sucrose. At higher concentrations (75%) a significant decrease in the isomaltulose yield (42.7-55%) is observed
